Sowing Instruction
Beets are a cool weather vegetable hence they should be planted when the weather is cool. When growing beets, make sure you plant the seeds one to two inches apart in the row. You can cover the seeds lightly with loose soil, and then sprinkle it with water. You should see the plants start growing in seven to 14 days. If you want a continuous supply, plant your beets in several plantings, about three weeks apart from each other. You can plant them in partial shade, but when growing beets you want their roots to reach a depth of at least 3-6 inches, so don’t plant them under a tree where they might run into tree roots.

Harvesting Instruction
Harvest the beets when they are 1 to 3 inches (1.5 to 4.5 cm) in diameter. Pull the beets gently from the soil. If you prefer to eat the beet tops, you will want to harvest the greens when the beets are much younger, so the greens will be tender. Stagger your beet planting about every 2 to 3 weeks if you want to have beets to harvest over a period of time. Otherwise, all of your beets and beet tops will be ready for harvesting at the same time.
