When picking up peas timing is everything. If you pick them at the right time then they are sweet but they turn starchy if you do not. Snow peas can be picked as soon as the pod reaches mature length. Sugar peas are best when the pods can be snap like a bean pod. Garden peas are the best when picked with filled pods.
